Tear pieces of bread from the loaf. It's supposed to be rustic so the pieces should not be even or the same size.
Place pieces on a sheet pan and drizzle with olive oil and sprinkle with espelette
Broil in oven for a few minutes until lightly crisp. Watch closely or you will burn them as I have been known to do.
Serve with cheese and/or a charcuterie board
