Goat/Beef curry (stew) is simple but very tasty with aromatic South Asian spices.

In a pot add 1/3 oil add the chopped onions first then the bay leaf, cardom, Cinnamon stick, garlic paste, ginger paste.
Once the oil heats up add all remaining ingredients except the water.
Mix well, cover and let it sit for 30 minutes on medium heat. Remove lid stir and taste salt or flavor if you would like to add more of the Coriander/ Cumin powder for flavor. Don't add to much

Cover again for another 1 hour and mix occasionally. Add the water leave on low heat until meat is tender.
1 Hour
Enjoy with Naan or basmati rice.
