This recipe is for a trifle-size bowl. If you use a small 9 X 9 brownie Pyrex dish, you can divide everything by 3.

Ingredients

 3 8 Oz containers of Mascarpone cheese
 12 Large egg yolks
 3 cups Sugar
 2 Pkgs Vicenzovo or bisconova or Goya lady finger cookies (safeway should have them & they should be in an orange package. You'll have some left over)
 9 cups Italian espresso coffee (don't use regular coffee)
 Cocoa
 Liqueur (I prefer Baileys but you can use Amaretto, Frangelica, Kahlua, or light rum)
 Crumbled cookies (optional) I use crumbled chocolate cookies but any crumbled cookies will do

Directions

Beat egg yolks and sugar until thick

Add mascarpone cheese and mix till smooth

Sweeten the Italian coffee with the liqueur to taste

Dip one vicenzovo cookie at a time quickly into coffee mixture making sure you don't let it soak on either side. Doing so will make them fall apart. After you dip a cookie, then line the bottom of your trifle bowl with the cookies. As you get to the sides, you can break the cookies in half (they'll be soft) and you can make them fit in the bottom of the bowl. Then line the cookies upright along the side of the trifle bowl

Using about one-third of the mascarpone mixture, drop dollops of the mascarpone on top of the soaked cookies that line the bottom of the bowl and spread evenly all the way to the cookies that are standing upright. Sprinkle the mascarpone with your crumbled cookies.

Place another layer of soaked cookies on top, then follow with the mascarpone cheese and the crumbled cookies.

Repeat with another layer except the top layer of mascarpone cheese should be sprinkled with cocoa instead of the crumbled cookies. You can decorate the top with raspberries or sliced strawberries or just leave it plain.

Refrigerate overnight and enjoy!
