Tex Mex Stuffed Peppers

Mexican Inspired Stuffed Pepper with a spicy Chipotle kick

 68 cups Water
 3 Bell Peppers
 1 lb Ground Beef
 1 Onion
 2 Garlic Cloves
 15 oz Can of Corn
 15 oz Can of Black or Pinto Beans
 15 oz Can of Crushed Tomatoes
 2 Chipotle Peppers in Adobo sauce
 1 cup Shredded Cheddar Cheese
 Salt & Pepper (to taste)

Preheat oven to 350F

Bring a pot of water to a boil

Slice bell peppers in half and remove the seeds and white internal spines

Boil peppers in water until tender (around 5-10min.)

Remove Peppers from water, pat dry, & place them opened side up in an oven safe pan

Finely dice onion and garlic

In a large skillet sauté the onion and garlic over medium high heat until translucent (2-3 min.)

Add the ground beef & cook until you no longer see pink

Finely dice chipotle peppers & add them to the ground beef

Open and drain the cans of corn and beans

Add the corn and pinto beans to the ground beef

Open and add the can of crushed tomatoes to the ground beef mixture

Add Salt and pepper to taste

Fill bell peppers with the ground beef mixture

15

Top peppers with cheddar cheese

Bake in the oven for 10-15min.
