Family recipe for a delicious chicken in a Spanish red sauce served over white rice. This meal is great with a side salad and salad.
With olive oil warming in large pot, cut up peppers, onion, minced garlic and cilantro for a few minutes and add all other ingredients. Cook on medium heat stirring occasional for around 1 Hour or a little longer till it becomes a little more like a sauce. Serve with rice and may garnish with parsley if desired. You can add more salt or pepper depending on your taste. Enjoy!
