Ingredients

 Olive oil
 4 Cloves garlic, chopped
 1 Can cannellini beans, rinsed and drained
 1 Yellow onion, chopped
 1 tsp Fresh parsley
 ½ tsp Celery salt
 1 Chicken bouilon cube
 Salt and pepper to taste
 Parmesan rind
 Small package of cubed pancetta
 2 Boxes of Pomi brand tomatoes
 1 lb Ditalini pasta

Directions

In a large heavy-bottom Le Creuset pot, heat olive oil and then add onion, garlic, and pancetta.

Sprinkle with celery salt, salt and peppe

Add chicken broth and tomatoes and bring to a boil

Then add bouillon and parmesan rind

Cover and cook on low for 2 hours.

About 30 minutes before the soup is done, add cannellini beans and put on a pot of water and cook pasta until al dente.

Drain all but about a half a cup of pasta water and throw pasta and water into the soup

Stir and then sprinkle parsley and cheese
