Oven Pot Roast

Great dish for a cold winter night.

Ingredients

 3 lbs Beef bottom round or rump
 Salt and pepper
 Flour
 Large onion, sliced
 1 Clove garlic, crushed
 2 cups Hot beef broth
 2 tbsp Tomato paste
 1 tbsp Sugar
 1 tbsp Vinegar
 1 tsp Thyme
 4 Sprig parsley
 2 Celery tops
 1 Bay leaf
 Tie together thyme, parsley, celery tops, and bay leaf into a bouquet

Directions

Mix the salt and pepper with the flour.

Dust the beef with flour/salt/pepper mixture.

Heat a couple of tablespoons of extra virgin olive oil in heavy oven-proof pan (Le Creuset)

Brown meat, then remove.

Add garlic and brown lightly.

Put meat back in pot and add remaining ingredients. Cover.

Bake at 350 until meat is tender, about 2 1/2 hours. Discard the herb bouquet
