Italian Sponge Cake

Ingredients

 6 Eggs, separated
 1 cup Sugar
 1 cup Cake flour
 2 Small boxes of instant vanilla pudding
 ¼ cup Italian coffee
 Fresh whipped cream

Directions

Cut wax paper to fit two 9" round cake pans. Spray pans with baking spray and then put wax paper in pan.

Separate eggs, putting whites in large mixer bowl and yolks in small mixer bowl.

Add 1/2 cupx sugar to whites and beat until very stiff.

Add 1/2 cup sugar to yolks and beat until very thick and light yellow in color.

Fold egg yolk mixture into egg whites.

Fold flour in using 1/3 cup each time until well mixed

Do not overmix.

Pour into prepared pans

Bake at 350 degrees for approximately 30 minutes or until inserted toothpick comes out dry.

Cool for a few minutes, invert onto a wire rack, remove from pan and remove wax paper.

Cool completely.

Place one cake on cake platter (flat side up), poke holes in cake with toothpick and sprinkle with coffee and liqueur

Spread pudding on top and place second cake on top of pudding (flat side down).

Poke holes in cake with toothpick and sprinkle with coffee and liqueur.

Frost with fresh whipped cream and serve with strawberries and/or raspberries.
