Peel, quarter, core, and slice apples about 1/4 inch thick
Place in a medium bowl with honey and cinnamon. Toss to coat and set aside while preparing cake.
In a large mixing bowl with electric mixer on low speed, mix flour, sugar oil, eggs, orange juice, baking powder, vanilla, and salt until combined. Increase to moderately high speed and mix until well blended; about 2 minutes.

Pour 1/3 batter into the greased and floured bundt pan
Arrange 1/3 of the apple slices over and sprinkle with chopped nuts (if using).
Cover with 1/2 of the remaining apple slices over batter top with the remaining batter, spreading the top evenly.
Overlap remaining apple slices around tube of the pan, extending out like petals.
Pour any juice that remains in the bowl over apples
Bake at 350 for 80 to 90 minutes or until toothpick comes out clean.
