Chocolate Pound Cake

 1 cup Soft butter or maragarine
 1 ¼ cups Sugar
 1 tsp Vanilla extract
 5 Eggs, seperated
 2 oz Unsweetened chocolate, melted (2 squares)
 2 cups Sifted flour
 ½ tsp Baking powder
 ½ tsp Salt
 Confectioners sugar (optional)

Cream butter until fluffy.

Add 1 cup sugar gradually, beating until light and fluffy. Add vanilla, then eggs yolks, one at a time, beating well after each addition.

Blend in cooled chocolate.

Add sifted flour, baking powder and salt; beat until smooth

Beat egg whites until stiff but not dry.

Gradually beat in 1/4 cup sugar. Fold into first mixture. Pour into loaf pan (9 x 5 x 3) lined on bottom with greased wax paper.

Bake in preheated slow oven, 300 degrees, for about 1 hour and 45 mins.

Turn out the rack and peel off paper

When cool, sift confectioners sugar over top, if desired.
