Banana Bread

I almost get excited when I realize my bananas are too ripe to eat because that means I get to make banana bread! This recipe is my favorite because most will have the ingredients in their cupboard already, it's quick and easy, and it always comes out tasty! Banana bread is also great to freeze and enjoy later.

 2 cups flour
 1 tsp baking soda
 ¼ tsp salt
 ½ tsp ground cinnamon
 ½ cup unsalted butter (1 stick)
 ¾ cup packed brown sugar
 2 eggs
  cup plain yogurt or sour cream
 2 cups mashed bananas (4 large bananas)
 1 tsp vanilla extract
 ¾ cup chopped pecans or walnuts (optional)

Preheat oven to 350°F. Grease a 9x5 inch loaf pan. Whisk flour, baking soda, salt, and cinnamon together. Using a mixer, beat the butter and brown sugar together on high until smooth and creamy. On medium speed, add eggs one at a time, beating well. Add in yogurt, mashed bananas, and vanilla on medium until combined. On low speed, slowly beat the dry ingredients into the wet ingredients until no flour pockets remain (do not overmix). Throw in nuts, if applicable. Spoon batter into the pan and bake for 60-65 Minutes. Cover the bread loosely with foil after 30 minutes of baking to help prevent burning. Toothpick test in the center after 60 minutes to make sure the bread is done. Remove from the oven and allow bread to cool completely before enjoying! Banana bread tastes best after two days as the flavors have time to settle. Freeze if needed.
