Apple Nut Muffins

 1 Egg
  cup Apple juice or milk
 ½ cup Vegetable oil
 1 tsp Vanilla extract
 2 cups Flour
 ¼ cup Sugar
 ¼ cup Light brown sugar
 1 tbsp Baking powder
 ½ tsp Salt
 ½ cup Chopped nuts
 1 Apple, chopped
 Sugar and cinnamon mixture

In a bowl, beat egg with juice, oil, and vanilla.

Stir in flour, sugar, baking powder and salt, just until flour is moistened (batter will be lumpy).

Stir in nuts and apple.

Spray muffin tins and fill.

Sprinkle with sugar and cinnamon.

Bake at 400 for 20 minutes until golden brown. Remove immediately from pan
