Alfredo Chicken Casserole

A low carb creamy, cheesy casserole that is a crowd pleaser for all, and sure to leave you full!

 8 oz Cream Cheese
 ½ cup Heavy Whipping Cream
 ½ cup Parmesan
 2 tbsp Parmesan
 ½ tsp Basil
 1 tsp Red Pepper Flakes
 ½ tsp Salt
 2.50 cups Cooked Chicken
 2 tbsp Garlic
 ½ cup Onion
 16 oz Cauliflower
 10 oz Spinach
 1 cup Shredded Mozzarella
 ½ cup Shredded Mozzarella

Preheat oven to 350 degrees.

In a large bowl, beat softened cream cheese, heavy whipping cream, 1/2 cup Parmesan, basil, salt and red pepper flakes until well mixed.

Add chicken, minced garlic, chopped onion, cauliflower, frozen spinach and 1 cup shredded mozzarella and mix until well combined.

Pour mixture into 9x13 or similar size casserole dish.

Top with remaining 1/2 cup mozzarella and 2 tablespoons parmesan cheese

Bake for 35-45 minutes until cheese begins to lightly brown on top.
