A perfect salad for any time of year that's easy to make and delicious for everyone. This salad hits you with a depth of tangy, sweet and cheesy flavor as well as chewy, crunchy and creamy smooth textures.

 16 cups Mixed Greens
 1 cup Sweetened Dried Cranberries
 1 cup Crumbled Walnuts
 11 oz Crumbled Goat Cheese
Lemon-Maple Vinaigrette
 1 tbsp Dijon Mustard
 ¼ cup Lemon Juice
 24 tbsp Maple Syrup
 1 cup Extra Virgin Olive Oil
 ½ tsp Salt
  tsp Freshly Ground Black Pepper

Combine mixed greens, cranberries, and walnuts in a large bowl. Just before serving, toss with 2/3 cup lemon-maple vinaigrette, and top with goat cheese.

Creating the Dressing

Combine the dijon mustard, lemon juice, maple syrup, olive oil, salt and pepper in a bowl, stirring well with a whisk. Cover and chill until ready to serve. If you like a sweeter dressing add more maple syrup. Please note to not add too much at first, this dressing is strong!
