Tips Section

Serve piping hot and top cheddar cheese, sour cream, scallions. You can also make rice or elbow macaroni and serve it over that. Also great with corn bread and beer. Taste as you go along to see if seasonings need to be adjusted.

Ingredients

 1 White onion, chopped
 2 tbsp Olive oil
 2 lbs Ground sirloin
 Salt and pepper to taste
 1 tsp Cumin (more or less to taste)
 1 tsp Thyme
 1 Bay leaf
 1 tsp Cayenne pepper
 2 Cans red kidney beans (rinsed and drained)
  cup Worcester sauce
 ½ cup Beef broth
 1 Can of dark beer
 1 cup Coffee
 1 Glass of full-bodied red wine

Directions

In a large heavy bottom pot (Le Creuset), heat olive oil and saute onions till translucent

Meanwhile, with a knife, cut both packages of ground beef (kind of like a checkerboard). This will reduce clumping of the beef.

Add ground sirloin, cooking till brown, stirring frequently to ensure the beef is broken up completely.

Add seasonings

Add all liquid ingredients

Cover and cook on low heat for one and a half hours.
