Ingredients

For the cCrepes
 4 Eggs
 1 cup Flour
 1 cup Water
 Salt
For the Filling
 15 oz Container ricotta cheese
 10 oz Package chopped frozen spinach, thawed and squeezed dry
 1 Egg
 2 tsp Fresh parsley, minced
 ½ tsp Black pepper
 ¼ tsp Garlic powder
 1 ½ cups Mozzarella cheese, shredded, divided
 ½ cup Parmesan cheese, grated, divided
 Marinara sauce

Directions

Mix crepe ingredients in blender and put in refrigerator for 15 minutes.

Lightly butter a small Teflon pan and spread a small ladle of batter in pan, swirling to edge.

Once the edges begin to curl, flip over and cook other side for 15 seconds

Remove from pan and repeat. Add butter as necessary.

In a large bowl, combine ricotta, spinach, and egg. Season with parsley, pepper and garlic powder.

Mix in 1 cup mozzarella and 1/4 cup Parmesan.

Ladle some of the sauce in the bottom of the 9 X 13 baking dish.

Fill the crepes with the ricotta filling by placing the ricotta in the bottom third of the crepe and then roll and place (seam side down) in baking dish.

Cover with more sauce

Sprinkle with remaining mozzarella and Parmesan.

Bake in preheated oven for 45 to 55 minutes.
